A Perfectly Peaceful Tuesday

Hi, guys! How's everyone doing? Things are going great over here!

It's nearly midnight and my day has drawn to a peaceful close. Husband and the kids are all tucked soundly into their beds and most are already fast asleep. Scotty is the only one burning the midnight oil, thoroughly engrossed in the book he's reading. Me, I'm sitting here writing to my dear family, friends, and secret blog readers, sipping my third cup of hot tea of the night while snowflakes fall outside my window.

Today was good! Got a lot done and had fun doing it. I guess that's pretty much the goal for us every day. Well, that and making sure God is at the center of everything we do. That would be number one.

Rundown of our day... Does this part get painfully monotonous for you? I hope not. It's actually helpful for me to see what we've accomplished each day and what we need to work harder on tomorrow. I hope I don't drive you all up the wall. I suppose you could skip over this part in my posts.

Okay, back to the rundown. Up early, showers all around, morning chores and breakfast, Bible studies, beatified the palace top to bottom, EXERCISED (I know, hard to believe, right? lol!), laundry washed and put away, didn't need to bake bread today... Lots of hard schoolwork for my smart cookies... 'An 'A' for each of you, lil' chicklets!'

Later in the afternoon, I spent a good, long time talking on the phone with my very sweet friend, Dianne. We've been besties since... um... forever! We've known each other since grade school but didn't become tight until I got over her being a horse-loving country girl, and she got past me being a prissy little princess. hehe! We compliment each other very well. We talk on the phone and I'm in the kitchen in my apron in my pristine house, and she's outside chasing chickens and feeding horses. It's awesome! I love you, Dianne!

So, speaking of kitchens... It's foodie time!

Okay, sticking to my theme, Claire Robinson's 5 Ingredient Fix meals... Tonight was Sunday Pot Roast with Mushroom Gravy. I just realized I was supposed to prepare this recipe on a Sunday. Oops! I bet Claire will forgive me. hehe!

Ya know what? This pot roast was really delicious! I think you should try it for yourselves. The recipe calls for a 4 to 5 pound boneless beef bottom round roast, Kosher salt and freshly ground black pepper, olive oil, 1 lb of cremini mushrooms, 2 med. yellow onions, and 4 cups of beef broth. Here's what mine looked like when it was all done: (I'm noticing my pictures look darker when I load them onto my blog. I'll see if I can lighten them next time.)

I added a couple more seasonings to the recipe to my own taste. I really love onion powder and garlic powder when I'm searing beef, so I added those. I also couldn't resist throwing in a splash of Medeira wine, tasting the brothy liquid before I put the seared meat back into the Dutch oven. It came out great!

Claire's pot roast recipe is perfect, even if you don't feel the need to jazz it up. The mushrooms and the onions gave the gravy and the meat a wonderfully rich and savory flavor. Yummy! Try it! You won't be disappointed. It's comfort food at its best.
